LIVING IN BELIZE – “San Ignacio Market, Coconut Water & Fruit Smoothies“ 10/8/12

This past Saturday was market day, just like every Saturday in San Ignacio Town is for most people.  If you’re moving to Belize in the Cayo District area, and you want to know where to meet up with some expats, the market would be one good place to start.

Every time I go, I see at least two or three friends, if not more. It is small town living at its best. Since I always talk about her, I thought it would be fun to show you a picture of my yogurt lady, Janet (and her daughter).

They are Mennonites and live on the road on the way to Cristo Rey at the “Cool M Farm.” In addition to the yogurt they make, they also sell farm fresh eggs, make the most divine mozzarella cheese, as well as many baked breads, cakes, and granola, as pictured here.

They also are now introducing Ricotta – can anyone say Lasagna!!

After I left Janet, I headed on down the aisle to where I buy my coconut water. You can’t miss them with their big pile of freshly cut coconuts!

After they pop them open, they store them in a cooler, and you can order as many bags as you want.  Lots of people like to drink them right out of the bag, but I buy them to use in my daily morning smoothie.

This is what they look like, and you can kind of tell in addition to coconut water, there is also the fruit of the coconut in the bag.  This makes for a very tasty and healthy smoothie, since coconut is well-known for its health and medicinal properties, and it tastes oh so much better than just using plain water.

I make my smoothies using a combination of coconut water, ice, yogurt, cinnamon (a good anti-inflammatory), and whatever fruit is in season that I’m craving. Today it was pineapple, cantaloupe, and papaya (and don’t forget to leave the papaya seeds in – another food wonder drug).

Unfortunately, they were out of pitihaya (dragon fruit) this weekend, my absolute favorite smoothie fruit! After I blend it all up, I have an extremely healthy and tasty breakfast in a cup. I seriously look forward to these every day.
